Ingredients:

For the cake:

2 cups grated carrots

1 1/2 cups all-purpose flour

1 cup sugar

1/2 cup brown sugar

3/4 cup vegetable oil

3 eggs

1 tsp vanilla extract

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

For the cream layer:

8 oz cream cheese (softened)

1/2 cup powdered sugar

1/2 cup heavy cream

1 tsp vanilla extract

For topping:

1/2 cup chopped nuts (walnuts or pecans)

1/4 cup caramel drizzle

1/4 cup crushed cookies or toffee bits

1 cinnamon stick (optional, for garnish)

Instructions:

1. Preheat oven to 350°F (175°C). Grease and line a square baking pan.

2. In a large bowl, whisk oil, sugar, brown sugar, and eggs until smooth. Add vanilla.

3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

4. Combine dry ingredients with wet mixture, then fold in grated carrots.

5. Pour batter into pan and bake for 30–35 minutes. Let cool completely.

6. Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately, then fold into the mixture.

7. Slice the cake into layers and spread the cream filling between layers and on top.

8. Finish with chopped nuts, caramel drizzle, crushed toppings, and a cinnamon stick for decoration.
