A cheesy, bacon-loaded, low-carb comfort dish that’s bursting with flavor! 😍
Ingredients:
* 1 large head cauliflower, cut into florets
* 1 cup sour cream
* 1 ½ cups shredded cheddar cheese (divided)
* 4 oz cream cheese, softened
* 6 slices bacon, cooked and crumbled
* 2 green onions, sliced
* ½ tsp garlic powder
* Salt and pepper to taste
* ¼ cup chopped chives (optional)
* ¼ cup crushed pork rinds or breadcrumbs for topping (optional)
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
2. Steam or boil cauliflower florets until just tender (about 5–7 minutes). Drain well.
3. In a large mixing bowl, combine sour cream, cream cheese, garlic powder, salt, pepper, and 1 cup of cheddar cheese. Stir until smooth.
4. Fold in cooked cauliflower, half the bacon, and green onions. Mix gently to coat everything evenly.
5. Transfer mixture to the prepared baking dish. Top with remaining cheddar cheese, bacon, and pork rinds or breadcrumbs if using.
6. Bake for 25–30 minutes until bubbly and golden on top.
7. Garnish with chives and serve hot!
