Strawberry Crunch Cheesecake Bites

Ingredients:
2 cups cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1 cup crushed golden sandwich cookies (like Golden Oreos)
1/2 cup crushed graham crackers
1/4 cup melted butter
1 cup strawberry jam or preserves
1 cup fresh strawberries, finely chopped (optional)
1 cup white chocolate or cheesecake filling (for center)
1 cup panko breadcrumbs or extra cookie crumbs (for crunch coating)
Oil for frying (if deep frying)
Instructions:
1. Preheat oven to 325°F (160°C). Line a baking dish with parchment paper.
2. In a bowl, mix crushed cookies, graham crackers, and melted butter. Press into the bottom to form a crust.
3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
4. Pour cheesecake mixture over crust and bake for 30 minutes or until set. Let cool completely, then refrigerate for at least 2 hours.
5. Once chilled, scoop or cut cheesecake into small bite-sized balls.
6. Insert a small amount of white chocolate or creamy filling into the center along with a little strawberry jam.
7. Roll each bite in strawberry jam lightly, then coat with crunchy crumbs or panko mixture.
8. (Optional) Freeze for 20 minutes, then quickly fry until golden for an extra crispy outside—or serve chilled as-is.
9. Drizzle extra strawberry sauce on top before serving.
