Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
5 tbsp melted butter
2 tbsp brown sugar
For the cheesecake filling:
16 oz cream cheese (softened)
¾ cup granulated sugar
2 eggs
1 tsp vanilla extract
½ cup sour cream
For the peach layer:
2 cups sliced peaches (fresh or canned, drained)
¼ cup brown sugar
1 tsp cinnamon
For the crumble topping:
½ cup flour
⅓ cup brown sugar
¼ cup butter (cold, cubed)
For garnish:
Whipped cream

Instructions:
1. Preheat oven to 325°F (160°C).
2. Mix graham cracker crumbs, melted butter, and brown sugar. Press into the bottom of a springform pan.
3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
4. In a bowl, toss peaches with brown sugar and cinnamon. Layer over the crust.
5. Pour cheesecake batter over the peaches.
6. Combine flour, brown sugar, and butter to form a crumb mixture. Sprinkle over the top.
7. Bake for 50–55 minutes until set. Let cool completely, then chill for at least 2 hours.
8. Serve topped with whipped cream and a drizzle of caramel sauce.
