Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
3/4 cup buttermilk
12 mini peanut butter cups
1/2 cup creamy peanut butter
1/2 cup powdered sugar
1/4 cup heavy cream
Extra peanut butter cups and chocolate syrup for topping
Instructions:
1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. In a bowl, whisk flour, cocoa powder, baking soda, and salt.
3. In another bowl, mix melted butter, sugar, and brown sugar until smooth. Add eggs and vanilla, then whisk well.
4. Alternate adding dry ingredients and buttermilk into the wet mixture until combined.
5. Fill each cupcake liner halfway with batter. Place a peanut butter cup in the center, then cover with more batter.
6. Bake for 14–16 minutes until set but still soft in the center. Let cool slightly.
7. Mix peanut butter and powdered sugar, then add heavy cream until smooth and pipeable.
8. Frost cupcakes generously, drizzle with chocolate syrup, and top with chopped peanut butter cups.
