Yield: 8 servings
Ingredients:
2 cups all-purpose flour
1 ¾ cups sugar
¾ cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 eggs
1 cup milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup hot coffee or hot water
3 ripe bananas (sliced)
1 cup banana pudding or custard
½ cup caramel sauce
For topping:
½ cup chocolate ganache
Banana slices
2 tbsp toasted coconut flakes
Instructions:
1. Preheat oven to 350°F (175°C) and grease two round cake pans.
2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add eggs, milk, oil, and vanilla. Beat until smooth.
4. Stir in hot coffee or water until batter is thin.
5. Divide batter into pans and bake for 30–35 minutes. Let cool completely.
6. Place one cake layer on a plate. Spread banana pudding evenly, then layer banana slices on top.
7. Drizzle caramel sauce generously over the bananas.
8. Place the second cake layer on top and repeat a light drizzle of caramel if desired.
9. Pour chocolate ganache over the top, letting it drip down the sides.
10. Garnish with banana slices and toasted coconut flakes.
Pro Tip:
For an extra gooey center like the picture, slightly warm the caramel before layering—it creates that irresistible lava effect when sliced!
