Taco Bell Mexican Pizza Copycat

Ingredients:

1 lb ground beef

1 packet taco seasoning

1/2 cup water

8 small flour tortillas

1 can refried beans

1 cup enchilada sauce

2 cups shredded Mexican cheese blend

1/2 cup diced tomatoes

1/2 cup shredded lettuce

1/4 cup sliced black olives

1/2 cup sour cream

2 tablespoons chopped fresh cilantro

Oil for frying

Instructions:

1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

2. Add taco seasoning and water, then simmer for 5 minutes until thickened.

3. Lightly fry tortillas in oil until golden and crispy. Drain on paper towels.

4. Spread a layer of refried beans on one tortilla, then top with seasoned beef.

5. Place another tortilla on top to form a “pizza.”

6. Spread enchilada sauce over the top tortilla and sprinkle with shredded cheese.

7. Bake at 400°F (200°C) for 8–10 minutes until cheese is melted and bubbly.

8. Remove from oven and top with tomatoes, lettuce, olives, sour cream, and cilantro.

9. Slice and serve warm.

Pro Tip:

For extra crunch, bake the tortillas instead of frying—just brush lightly with oil and bake until crisp! 😋
