Gooey Butter Pecan Cake

Ingredients:

Cake Layer:

1 cup all-purpose flour

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

2 eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped pecans

Gooey Cream Layer:

8 oz cream cheese, softened

2 eggs

3 cups powdered sugar

1/2 cup melted butter

1 teaspoon vanilla extract

Pecan Topping:

1 cup pecan halves

1/2 cup brown sugar

1/3 cup heavy cream

1/4 cup butter

1 teaspoon vanilla extract

Pinch of salt

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9-inch round or square baking pan.

2. In a bowl, mix flour, brown sugar, granulated sugar, baking powder, and salt.

3. Add melted butter, eggs, milk, and vanilla. Mix until smooth.

4. Fold in chopped pecans and pour the batter into the prepared pan.

5. In another bowl, beat cream cheese until smooth. Add eggs, powdered sugar, melted butter, and vanilla. Mix until creamy.

6. Pour the cream cheese mixture over the cake batter.

7. Bake for 40–45 minutes until the edges are golden and the center is slightly gooey.

8. While the cake bakes, make the pecan topping by melting butter in a saucepan. Add brown sugar and cream, stirring until smooth.

9. Stir in pecans, vanilla, and salt. Simmer for 2–3 minutes until thick.

10. Pour the warm pecan topping over the baked cake and let it soak in slightly before serving.
