Easy Crispy Egg Rolls

Ingredients:

12 egg roll wrappers

1 lb ground pork or chicken

2 cups shredded cabbage

1/2 cup shredded carrots

3 green onions, chopped

2 cloves garlic, minced

1 tbsp soy sauce

1 tsp sesame oil

1/2 tsp ground ginger

Salt and pepper to taste

Oil for frying

Instructions:

1. In a pan over medium heat, cook the ground meat until browned. Drain excess fat.

2. Add garlic, cabbage, carrots, and green onions. Stir-fry for 3–4 minutes until slightly softened.

3. Stir in soy sauce, sesame oil, ginger, salt, and pepper. Cook for another 2 minutes, then let mixture cool.

4. Place an egg roll wrapper on a flat surface. Add 2–3 tablespoons of filling near one corner.

5. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal edge with a little water.

6. Heat oil in a deep pan to 350°F (175°C). Fry egg rolls in batches until golden brown and crispy, about 3–4 minutes.

7. Remove and drain on paper towels. Serve hot with sweet chili sauce or soy sauce.

Pro Tip:

For extra crispiness, double fry the egg rolls—fry once, let them rest for a minute, then fry again for a deeper golden crunch!
