Ultra-creamy cheesecake loaded with caramel, chocolate, and crunchy pecans on a rich chocolate crust — a decadent turtle candy dream! 😍✨
Ingredients:
For the crust:
1 1/2 cups chocolate cookie crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter (melted)
For the cheesecake filling:
3 (8 oz) packages cream cheese (softened)
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans
For the topping:
1/2 cup caramel sauce
1/2 cup chocolate ganache or melted chocolate
1/2 cup whole or chopped pecans
Whipped cream (optional)
Instructions:
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a bowl, mix chocolate cookie crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes, then cool.
3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
4. Add eggs one at a time, mixing gently after each addition.
5. Stir in vanilla extract and sour cream until combined.
6. Fold in chocolate chips and chopped pecans.
7. Pour filling over the cooled crust and smooth the top.
8. Bake for 50–60 minutes, until the center is slightly set but still a little jiggly.
9. Turn off oven and let cheesecake cool inside with the door slightly open for 1 hour.
10. Refrigerate for at least 4 hours or overnight.
11. Before serving, drizzle caramel sauce and chocolate ganache over the top. Sprinkle generously with pecans and add whipped cream if desired.
