Ingredients:
1 box white or vanilla cake mix
Ingredients listed on cake mix (eggs, oil, water)
1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, melted
2 cups powdered sugar
1 teaspoon vanilla extract
1 1/2 cups fresh strawberries, chopped
1/2 cup strawberry pie filling
1/2 cup shredded sweetened coconut (optional)
1/2 cup white chocolate chips (optional)
Whipped cream for topping
Whole fresh strawberries for garnish
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. Prepare cake batter according to package instructions. Pour into prepared baking dish.
3. Sprinkle chopped strawberries evenly over the batter. Add coconut and white chocolate chips if using.
4. In a bowl, beat cream cheese, melted butter, powdered sugar, and vanilla until smooth and creamy.
5. Drop spoonfuls of the cream cheese mixture over the cake batter. Do not spread — this creates the “earthquake” effect.
6. Spoon small dollops of strawberry pie filling on top and lightly swirl with a knife.
