Mississippi Mud Cake

Ingredients:

For the Cake:

• 1 cup unsalted butter, melted

• 1 3/4 cups granulated sugar

• 4 large eggs

• 1 teaspoon vanilla extract

• 1/3 cup unsweetened cocoa powder

• 1 1/2 cups all-purpose flour

• 1/4 teaspoon salt

• 1 cup chopped pecans (optional)

For the Marshmallow Layer:

• 3 cups mini marshmallows

For the Chocolate Glaze:

• 1/2 cup unsalted butter

• 1/3 cup unsweetened cocoa powder

• 1/3 cup milk

• 3 cups powdered sugar

• 1 teaspoon vanilla extract

• 1/2 cup chopped pecans (for topping)

Instructions:

1. Preheat oven to 350°F (175°C). Grease and lightly flour a 9x13-inch baking dish.

2. In a large bowl, mix melted butter and sugar until combined. Add eggs one at a time, beating well after each addition. Stir in vanilla.

3. Add cocoa powder, flour, and salt. Mix until just combined. Fold in chopped pecans if using.

4. Pour batter into prepared baking dish and spread evenly.

5. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out mostly clean.

6. Immediately sprinkle mini marshmallows evenly over the hot cake. Return to oven for 2–3 minutes until marshmallows puff. Remove and let cool slightly.

7. For the glaze, melt butter in a saucepan over medium heat. Stir in cocoa powder and milk until smooth. Remove from heat and whisk in powdered sugar and vanilla until glossy.

8. Pour warm glaze over marshmallow layer and spread gently. Sprinkle with chopped pecans.

9. Let cake cool completely before slicing so the layers set perfectly.
