Loaded Cheesy Pocket Tacos

Ingredients:

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tablespoons homemade)

¼ cup water

2 cups shredded cheddar cheese

8 small flour tortillas

Butter or oil for pan-frying

Optional Toppings:

Sour cream

Shredded lettuce

Instructions:

1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3 minutes.

2. Add garlic and cook for 30 seconds until fragrant.

3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.

4. Stir in taco seasoning and water. Simmer for 3–4 minutes until thickened. Remove from heat.

5. Lay a tortilla flat and spoon beef mixture onto one half. Sprinkle generously with shredded cheddar.

6. Fold the tortilla over tightly to create a pocket.

7. Heat a clean skillet over medium heat and lightly coat with butter or oil.

9. Let rest for 1–2 minutes before slicing in half.
