German Chocolate Brownie Cheesecake

Ingredients:

Brownie layer:

* 1/2 cup unsalted butter, melted

* 1 cup sugar

* 2 eggs

* 1 tsp vanilla extract

* 1/3 cup cocoa powder

* 1/2 cup all-purpose flour

* 1/4 tsp salt

Cheesecake layer:

* 16 oz cream cheese, softened

* 1/2 cup sugar

* 2 eggs

* 1 tsp vanilla extract

German chocolate topping:

* 1/2 cup evaporated milk

* 1/2 cup brown sugar

* 2 egg yolks

* 1/4 cup unsalted butter

* 1 tsp vanilla extract

* 2/3 cup sweetened shredded coconut

* 1/2 cup chopped pecans

Chocolate ganache:

* 1/2 cup heavy cream

* 1 cup semi-sweet chocolate chips

Instructions:

Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

Prepare the brownie layer by mixing melted butter and sugar. Whisk in eggs and vanilla, then stir in cocoa powder, flour, and salt. Spread evenly into the pan.

For the cheesecake layer, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour gently over the brownie batter.

Bake for 50–60 minutes until the center is just set. Turn off oven, crack the door, and let cool inside for 30 minutes. Chill completely.

Make the German chocolate topping by cooking evaporated milk, brown sugar, egg yolks, and butter over medium heat until thickened. Remove from heat and stir in vanilla, coconut, and pecans. Cool, then spread over cheesecake.

Heat heavy cream until steaming and pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Pour ganache over the topping and chill until set.

Pro Tip:

For clean slices, dip your knife in hot water and wipe between cuts — this cheesecake is ultra-layered and rich!
