Ingredients:
For the crust:
* 2 cups chocolate cookie crumbs
* 5 tablespoons melted butter
* 2 tablespoons sugar
For the filling:
* 24 oz (3 blocks) cream cheese, softened
* 1 cup creamy peanut butter
* 1 cup sugar
* 1/2 cup brown sugar
* 3 large eggs
* 1 teaspoon vanilla extract
* 1/2 cup heavy cream
* 1 cup chopped Reese’s Peanut Butter Cups
For topping:
* 6–8 Reese’s Peanut Butter Cups, halved
* 1/4 cup chocolate sauce
* 1/4 cup caramel sauce
Instructions:
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. Mix chocolate cookie crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan. Bake for 8 minutes, then let cool.
3. In a large bowl, beat cream cheese until smooth and creamy.
4. Add peanut butter, sugar, and brown sugar. Mix until fully combined.
5. Beat in eggs one at a time, mixing on low speed.
6. Add vanilla and heavy cream. Mix just until smooth.
7. Fold in chopped Reese’s cups gently.
8. Pour filling over cooled crust and smooth the top.
9. Bake for 55–65 minutes, until the center is slightly jiggly but set around the edges.
10. Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour.
11. Refrigerate at least 4 hours or overnight.
12. Before serving, top with halved Reese’s cups and drizzle generously with chocolate and caramel sauce.
