Ingredients:
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon cinnamon
* 3 ripe bananas, mashed
* 3/4 cup brown sugar
* 1/2 cup granulated sugar
* 1/2 cup melted butter
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 cup sour cream or Greek yogurt
For the frosting:
* 8 oz cream cheese, softened
* 1/2 cup butter, softened
* 2 cups powdered sugar
* 1 teaspoon vanilla extract
For topping:
* 1 cup caramel sauce (homemade or store-bought)
* 1 cup pecans, toasted
* 2 bananas, sliced
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. In a bowl, whisk flour, baking soda, salt, and cinnamon.
3. In another bowl, mix mashed bananas, sugars, melted butter, eggs, vanilla, and sour cream until smooth.
4. Fold dry ingredients into wet mixture until just combined.
5. Divide batter evenly between pans and bake for 30–35 minutes. Let cool completely.
6. Beat cream cheese and butter until fluffy, then mix in powdered sugar and vanilla.
7. Assemble cake by layering frosting between cake layers.
8. Frost the outside, press pecans onto the sides, top with banana slices, and generously drizzle caramel over the cake.
Pro Tip:
Warm the caramel slightly before pouring so it cascades beautifully down the sides for that bakery-style drip 😍🍯
