🥓🥗 BLT Macaroni Salad 🍅🧀
A creamy, crunchy twist on the classic BLT—perfect for picnics, potlucks, and summer cookouts 😋☀️
Ingredients:
* 2 cups elbow macaroni, uncooked
* 8 slices bacon, cooked crispy and crumbled
* 1 cup cherry tomatoes, diced
* 1/3 cup red onion, finely chopped
* 1/2 cup mayonnaise
* 1/4 cup sour cream (or Greek yogurt)
* 1 tablespoon lemon juice or apple cider vinegar
* 1 teaspoon Dijon mustard
* Salt and black pepper, to taste
* 2 tablespoons fresh parsley, chopped
* Optional: 1 cup chopped romaine or iceberg lettuce (add just before serving)
Instructions:
1. Cook the macaroni in salted water according to package instructions. Drain and rinse with cold water until completely cool.
2. In a large bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, salt, and pepper until smooth.
3. Add cooled macaroni, bacon, tomatoes, red onion, and parsley to the bowl.
4. Gently toss until everything is evenly coated in the dressing.
5. Taste and adjust seasoning as needed.
6. Chill for at least 30 minutes before serving. If using lettuce, fold it in right before serving for maximum crunch.
