🍓🍰 Berrylicious Strawberry Crunch Cheesecake 🍓✨
A creamy, dreamy strawberry-loaded cheesecake with crunchy layers and sweet berry swirls in every bite 😍
Ingredients:
For the crust:
• 2 cups golden sandwich cookies or graham crackers, crushed
• ½ cup melted butter
For the cheesecake filling:
• 24 oz (3 blocks) cream cheese, softened
• 1 cup granulated sugar
• 1 tsp vanilla extract
• 3 large eggs
• 1 cup sour cream or heavy cream
For the strawberry layer:
• 2 cups fresh strawberries, chopped
• ½ cup strawberry preserves or sauce
For the crunch topping:
• 1½ cups crushed golden cookies
• ¼ cup freeze-dried strawberries, crushed
• ¼ cup melted butter
For garnish:
• Fresh strawberries
• Extra strawberry sauce (optional)
Instructions:
1. Preheat oven to 325°F (165°C). Grease a springform pan.
2. Mix crushed cookies with melted butter and press firmly into the bottom of the pan. Chill for 10 minutes.
3. Beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time. Mix in sour cream until creamy.
4. Pour half the cheesecake batter over the crust. Spoon strawberry sauce and chopped strawberries over it.
5. Add remaining cheesecake batter and gently swirl with a knife.
6. Bake for 55–65 minutes until center is slightly jiggly. Turn off oven and cool inside with door cracked.
7. Chill in refrigerator at least 4 hours or overnight.
8. Mix crunch topping ingredients and sprinkle generously on top before serving.
9. Garnish with fresh strawberries and extra sauce.
