A creamy, cheesy comfort-food casserole loaded with tender chicken, fluffy potatoes, and fresh broccoli 🤍😋

Ingredients:

* 3 cups cooked chicken breast, diced or shredded

* 3 cups potatoes, peeled and cubed (or parboiled potato chunks)

* 2 cups broccoli florets

* 1 1/2 cups shredded cheddar cheese

* 1/2 cup mozzarella or Monterey Jack cheese

* 1 can (10.5 oz) cream of chicken soup

* 1/2 cup sour cream

* 1/2 cup milk or heavy cream

* 2 tbsp butter, melted

* 1/2 small onion, finely chopped

* 2 cloves garlic, minced

* Salt and black pepper to taste

* 1/2 tsp paprika

* 1/2 tsp dried parsley or Italian seasoning

Instructions:

1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

2. Parboil potatoes in salted water for 8–10 minutes until just fork-tender. Drain well.

3. Steam broccoli for 3–4 minutes until bright green but still crisp.

4. In a large bowl, mix cream of chicken soup, sour cream, milk, melted butter, garlic, onion, salt, pepper, paprika, and seasoning.

5. Add chicken, potatoes, and broccoli to the sauce and gently toss to coat.

6. Transfer mixture to the prepared baking dish and spread evenly.

7. Sprinkle cheddar and mozzarella evenly over the top.

8. Bake uncovered for 35–40 minutes until bubbly and golden on top.

9. Let rest 5 minutes before serving for best texture.
