**Ingredients:**

* 1/2 tsp turmeric

* 1/2 tsp ground cumin (geera)

* 2 tbsp vegetable oil

* 4 garlic cloves, minced

* 1 small onion, finely chopped

* 1 roma tomato, chopped

* 1/2 cup coconut milk

* 1/2 cup water or seafood broth

* Salt and black pepper to taste

* Fresh chopped parsley or culantro for garnish

* Optional: hot pepper (scotch bonnet or chili) to taste

*For the Rice:*

* 2 cups cooked basmati or jasmine rice

* 1 tbsp butter or coconut oil

* Salt to taste

* Chopped parsley or scallions for garnish

*For the Tomato Salad:*

* 1 cup cherry or grape tomatoes, halved

* Drizzle of olive oil

* Pinch of salt

* Fresh parsley or basil, chopped
