**Ingredients:**
* 4 boneless, skinless chicken breasts
* 4 oz cream cheese, softened
* 1/2 cup shredded mozzarella or fontina cheese
* 1/4 cup chopped fresh spinach or parsley
* Salt and black pepper, to taste
* 1 tbsp olive oil
**For the blackberry glaze:**
* 1 cup fresh or frozen blackberries
* 2 tbsp honey
* 1 tbsp balsamic vinegar
* 1/2–1 chipotle pepper in adobo, finely chopped (adjust for spice)
* Pinch of salt
**Instructions:**
1. **Preheat oven** to 375°F (190°C).
2. **Prepare the filling:** Mix cream cheese, shredded cheese, and spinach in a bowl. Season with a pinch of salt and pepper.
3. **Stuff the chicken:** Slice a pocket into each chicken breast. Spoon cheese mixture inside, securing with toothpicks if needed. Season chicken with salt and pepper.
4. **Sear the chicken:** Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden brown, about 3–4 minutes per side.
5. **Finish in oven:** Transfer skillet to oven (or move chicken to a baking dish) and bake for 15–20 minutes, until cooked through and juices run clear.
6. **Make the glaze:** While chicken bakes, simmer blackberries, honey, balsamic vinegar, chipotle, and salt in a saucepan over medium heat. Mash berries as they soften. Simmer until thickened, about 10 minutes. Strain for a smooth glaze if desired.
