🍓🌋 Strawberry Earthquake Cake 🍰💥
A deliciously messy, berry-loaded cake explosion that'll shake up your dessert table! 😍
Ingredients:
* 1 box white cake mix (plus eggs, oil, and water as directed)
* 2 cups strawberry pie filling or fresh chopped strawberries + strawberry glaze
* 8 oz cream cheese, softened
* 1/2 cup powdered sugar
* 1 tsp vanilla extract
* 1 tub (8 oz) whipped topping (Cool Whip or similar)
* Whipped cream and whole strawberries for topping
* Powdered sugar for dusting
Instructions:
1. Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking dish.
2. Prepare white cake batter according to the box instructions.
3. In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Gently fold in half of the whipped topping.
4. Pour half the cake batter into the baking dish.
5. Spread the strawberry pie filling evenly over the batter.
6. Spoon the cream cheese mixture on top of the strawberry layer, then pour the remaining cake batter over everything.
7. Bake for 30–35 minutes or until the top is golden and a toothpick comes out mostly clean (it's meant to be gooey).
8. Cool completely, then frost with remaining whipped topping.
9. Garnish with whole strawberries and a dusting of powdered sugar.
