A bold and spicy Southern classic with juicy shrimp, flavorful sausage, and seasoned rice—all in one skillet! 💥🍚
**Ingredients:**
* 1 lb large shrimp, peeled and deveined
* ½ lb andouille sausage or ground beef, cooked and crumbled
* 2 cups cooked white rice (preferably day-old)
* 1 small onion, diced
* 1 bell pepper (red or green), diced
* 2 celery stalks, diced
* 2 cloves garlic, minced
* 1 tbsp Cajun seasoning (adjust to taste)
* 2 tbsp olive oil or butter
* Salt and pepper to taste
* 2 green onions, chopped (for garnish)
**Instructions:**
1. In a large skillet, heat 1 tbsp oil over medium heat. Add sausage or beef and cook until browned. Remove and set aside.
2. Add remaining oil, then sauté onion, bell pepper, and celery until soft (about 5 minutes). Add garlic and cook another minute.
3. Season shrimp with Cajun seasoning. Add to skillet and cook until just pink (about 3 minutes per side). Remove and set aside.
4. Stir in cooked rice and browned sausage. Mix well and let cook for 2–3 minutes to crisp slightly.
5. Return shrimp to the pan and toss everything together. Season with salt and pepper to taste.
6. Garnish with chopped green onions and serve hot!
