* 1 cup heavy whipping cream
* 1 tbsp instant coffee granules
* 1/2 tsp vanilla extract
**For toppings & filling:**
* 1 ½ cups chocolate pudding (prepared)
* 1/2 cup caramel sauce
* 1/4 cup chocolate syrup
* Whipped cream (optional)
* Chocolate shavings or mini chips (optional)
Instructions:
1. Bake chocolate cake in a 9x13 inch pan according to package instructions, substituting half the water with coffee. Let cool completely.
2. In a bowl, beat cream cheese and powdered sugar until smooth.
3. In a separate bowl, dissolve instant coffee in 1 tbsp warm water. Add to cream cheese mixture along with vanilla.
4. Whip the heavy cream until stiff peaks form, then gently fold into the mocha cream cheese mixture.
5. Slice cooled cake horizontally into two layers.
