A cheesy, zesty one-pan dinner bursting with juicy chicken, colorful peppers, and creamy queso!


Ingredients:


* 1 lb boneless chicken breast, diced

* 1 tbsp olive oil

* 1 cup long-grain rice

* 2 cups chicken broth

* 1 cup salsa (mild or spicy)

* 1/2 cup diced red bell pepper

* 1/2 cup diced green bell pepper

* 1/2 cup diced yellow bell pepper

* 1 tsp chili powder

* 1/2 tsp cumin

* Salt & pepper to taste

* 1 cup shredded cheese (Mexican blend or mozzarella)

* 1/2 cup queso sauce (store-bought or homemade)


Instructions:


1. In a large skillet, heat olive oil over medium-high heat. Add diced chicken, season with chili powder, cumin, salt, and pepper, and cook until browned.

2. Stir in uncooked rice, salsa, and chicken broth. Mix well and bring to a boil.

3. Reduce heat to low, cover, and simmer for about 15–18 minutes or until rice is tender and liquid is absorbed.

4. Add bell peppers and stir to combine. Cook for another 3–5 minutes until peppers are tender-crisp.

5. Drizzle queso sauce over the top and sprinkle with shredded cheese. Cover for 2–3 minutes until cheese melts.

6. Serve hot straight from the skillet!


Pro Tip:

Add a squeeze of lime and a sprinkle of chopped cilantro for a fresh finish that balances the cheesy richness.
