Crispy Chicken Egg Rolls

Golden, crunchy egg rolls stuffed with savory chicken and fresh veggies!


Ingredients:


* 1 lb ground chicken

* 2 cups shredded cabbage

* 1 cup shredded carrots

* 1/2 cup chopped green onions

* 2 cloves garlic, minced

* 1 tbsp soy sauce

* 1 tsp sesame oil

* Salt & pepper to taste

* 10–12 egg roll wrappers

* Vegetable oil for frying


Instructions:


1. In a skillet over medium heat, cook the ground chicken until browned.

2. Add garlic, soy sauce, sesame oil, salt, and pepper. Stir well.

3. Mix in cabbage, carrots, and green onions. Cook for 2–3 minutes until slightly softened. Remove from heat and let cool.

4. Lay out an egg roll wrapper with a corner facing you. Spoon 2–3 tablespoons of filling in the center.

5. Fold the bottom corner over the filling, then fold in sides and roll tightly. Seal the edge with a bit of water.

6. Heat oil in a deep pan to 350°F (175°C). Fry egg rolls in batches until golden brown and crispy, about 3–4 minutes per side.

7. Drain on paper towels and serve hot with dipping sauce.


Pro Tip:

For an extra crispy crust, double-fry the egg rolls: fry once for 2 minutes, rest, then fry again until golden!
