**Ingredients:**


* 3 salmon fillets (skin on or off)

* Salt & pepper to taste

* 2 tablespoons olive oil

* 1 tablespoon butter

* 3 cloves garlic, minced

* 1 cup orzo pasta

* 2 cups chicken or vegetable broth

* 1/2 cup heavy cream

* Juice and zest of 1 lemon

* 2 cups fresh spinach

* Fresh parsley, chopped (for garnish)

* Lemon slices (for garnish)


**Instructions:**


1. **Season salmon** with salt and pepper on both sides.

2. In a large skillet, heat **olive oil** over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden and just cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium and add **butter** and **garlic**, sautéing for 30 seconds.

4. Stir in the **orzo**, letting it toast lightly for 1-2 minutes.

5. Pour in the **broth**, **lemon juice**, and **zest**. Bring to a simmer and cook uncovered for about 8-10 minutes, stirring occasionally.

6. Stir in the **cream** and **spinach**, cooking until spinach is wilted and orzo is creamy.

7. Return the salmon to the skillet and warm through for 1-2 minutes.

8. Garnish with **chopped parsley** and **lemon slices**. Serve hot!
