**Ingredients:**
* 3 salmon fillets (skin on or off)
* Salt & pepper to taste

* 1 cup orzo pasta

* Juice and zest of 1 lemon
* 2 cups fresh spinach

**Instructions:**
1. **Season salmon** with salt and pepper on both sides.
