Layered Sweet Potato Lasagna

A cozy and hearty vegetarian twist on classic lasagna, packed with creamy cheese, sweet potatoes, herbs, and crunchy walnuts!
Ingredients:
* 3 large sweet potatoes, peeled and thinly sliced
* 2 cups ricotta cheese
* 1 cup crumbled feta cheese
* 2 cups spinach or kale, finely chopped
* 2 cloves garlic, minced
* 2 tbsp olive oil
* 1 tbsp fresh thyme or rosemary (plus extra for garnish)
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1/2 cup chopped walnuts
* 1/4 cup dried cranberries (optional)
* 3 tbsp honey or maple syrup (for drizzling)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Lightly oil a baking dish or loaf pan.
3. In a bowl, mix ricotta, feta, chopped greens, garlic, salt, pepper, and thyme.
4. Layer the bottom of the dish with sweet potato slices.
5. Spread a layer of the cheese and greens mixture on top.
6. Repeat layers, finishing with a layer of sweet potatoes on top.
7. Cover with foil and bake for 35–40 minutes until sweet potatoes are tender.
8. Remove foil, top with chopped walnuts and cranberries, and drizzle with honey or maple syrup.
9. Return to oven uncovered for 5 more minutes until the top is golden and sticky.
10. Garnish with a sprig of rosemary and serve warm.
Pro Tip:
Use a mandoline slicer to get perfect, even sweet potato slices for a neater, layered look!
