**Ingredients:**

For the chicken:

* 2 boneless chicken breasts

* Salt & pepper, to taste

* 1/2 cup flour

* 2 eggs, beaten

* 1 cup panko breadcrumbs

* Oil for frying

For the bang bang sauce:

* 1/2 cup mayo

* 1/4 cup sweet chili sauce

* 1–2 tbsp Sriracha (adjust to taste)

* 1 tbsp honey


For the fried rice:

* 3 cups cooked rice (preferably day-old)

* 2 eggs, scrambled

* 1/2 cup frozen peas

* 1/2 cup diced carrots

* 2 green onions, chopped

* 2 tbsp soy sauce

* 1 tbsp sesame oil

* 1 tbsp vegetable oil

**Instructions:**

1. **Prepare the bang bang sauce**: In a bowl, mix mayo, sweet chili sauce, Sriracha, and honey. Set aside.

2. **Cook the chicken**: Season chicken with salt and pepper. Dredge in flour, dip in egg, coat with panko. Fry until golden and crispy. Slice into strips.

3. **Make the fried rice**: In a wok or large pan, heat oil. Add peas, carrots, and sauté for 2-3 mins. Push to the side, scramble eggs in the same pan.

4. Add rice, soy sauce, and sesame oil. Stir-fry everything together until heated through. Stir in green onions.
