Ingredients:

* 1 box brownie mix (plus ingredients listed on box)

* 1 cup unsalted butter, softened

* 1 cup brown sugar

* 1/2 cup granulated sugar

* 2 tsp vanilla extract

* 2 cups all-purpose flour

* 1/2 tsp salt

* 2 tbsp milk

* 1 cup mini chocolate chips

* 1/2 gallon vanilla or cookie dough ice cream (softened slightly)

* 1 ½ cups chocolate ganache or melted chocolate chips

* Chocolate sandwich cookies (crushed or whole, for topping)

* Peanut butter scoops or truffles (for garnish)

* Fresh cranberries or berries (optional)

* Chocolate decorations (trees, shards, etc.)

* Powdered sugar (optional, for dusting)

Instructions:

1. Preheat oven and bake the brownie base according to package directions in an 8x8" or 9x9" pan. Let it cool completely.

2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

3. Mix in vanilla, flour, salt, and milk until smooth. Fold in mini chocolate chips. Chill the dough for 20 minutes.

4. Once brownies are cool, spread softened ice cream evenly over the top. Freeze until firm (1-2 hours).

5. Scoop and shape cookie dough into balls and place on top of the frozen ice cream layer.

6. Drizzle with chocolate ganache. Decorate with crushed cookies, peanut butter scoops, chocolate trees, berries, and dust with powdered sugar.

7. Freeze again for at least 1 hour before slicing and serving.

Pro Tip:

Use an offset spatula for smooth ice cream layering and dip your knife in hot water to slice neatly through the frozen layers!
