Ingredients:
* 1 lb ground beef
* 1 tbsp olive oil
* 1 small onion, diced
* 1 red bell pepper, diced
* 1 green bell pepper, diced
* 2 cloves garlic, minced
* 1 (14.5 oz) can diced tomatoes
* 1 (8 oz) can tomato sauce
* 1 1/2 cups cooked white rice
* 1 tsp Italian seasoning
* Salt and pepper to taste
* 1 1/2 cups shredded cheddar cheese
* Fresh parsley or cilantro for garnish
* Sour cream (optional topping)
Instructions:
1. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
2. Stir in diced onion, garlic, and both bell peppers. Cook for about 5 minutes, until veggies are slightly softened.
3. Add diced tomatoes (with juices), tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Stir well to combine.
4. Reduce heat to low and simmer for 10 minutes to blend the flavors.
5. Sprinkle cheddar cheese evenly over the top, cover with lid, and cook until cheese melts (about 5 minutes).
