Ingredients:
**For the crust & base layer:**
* 1 box vanilla cake mix (plus eggs, oil & water per package)
* 1 tsp cinnamon (optional for extra warmth)
**For the cheesecake layer:**
* 2 (8 oz) blocks cream cheese, softened
* 1/2 cup granulated sugar
* 2 eggs
* 1 tsp vanilla extract
**For the peach filling:**
* 3 cups sliced canned or fresh peaches (drained if using canned)
* 1/4 cup brown sugar
* 1 tsp cinnamon
* 1 tbsp cornstarch (optional, for thickening)
**For the cobbler crumble:**
* 1/2 cup all-purpose flour
* 1/4 cup brown sugar
* 1/2 tsp cinnamon
* 1/4 cup cold butter, cubed
**For topping:**
* Caramel sauce
* Extra peach slices (fresh or canned)
Instructions:
1. Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan.
2. Prepare cake mix as directed on the box, pour half the batter into the pan, and bake for 20–25 minutes until just set. Cool slightly.
3. While baking, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over baked cake layer.
4. In a bowl, toss peaches with brown sugar, cinnamon, and cornstarch. Spoon over cheesecake layer evenly.
5. In another bowl, combine flour, brown sugar, cinnamon, and butter to form a crumbly mix. Sprinkle over the peaches.
6. Bake for 45–50 minutes or until the center is mostly set. Cool to room temp, then chill in fridge for at least 4 hours.
7. Before serving, drizzle with caramel sauce and garnish with peach slices.
