Mini cheesecakes with a buttery graham crust and sweet cherry topping – perfect bite-sized treats! 🍒✨




Ingredients:


* 1 cup graham cracker crumbs

* 3 tbsp granulated sugar

* 4 tbsp unsalted butter, melted

* 8 oz cream cheese, softened

* 1/3 cup granulated sugar (for filling)

* 1 large egg

* 1 tsp vanilla extract

* 1 tbsp lemon juice

* 1/2 cup sour cream

* 1 cup cherry pie filling


Instructions:


1. Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.

2. In a bowl, mix graham cracker crumbs, 3 tbsp sugar, and melted butter until combined.

3. Press about 1 tablespoon of the crumb mixture into each liner to form the crust.

4. Bake crusts for 5 minutes, then let cool slightly.

5. In a separate bowl, beat cream cheese and 1/3 cup sugar until smooth.

6. Add the egg, vanilla, lemon juice, and sour cream. Mix until creamy.

7. Spoon the cheesecake mixture evenly into the liners (fill about 3/4 full).

8. Bake for 15–18 minutes or until centers are set.

9. Cool completely, then chill in the fridge for at least 2 hours.

10. Top each cupcake bite with a spoonful of cherry pie filling before serving.
