**Ingredients:**


* 1 lb ground beef or ground turkey

* 1 tablespoon olive oil

* 1 small onion, diced

* 2 garlic cloves, minced

* 1 green bell pepper, chopped

* 1 red bell pepper, chopped

* 2 celery stalks, chopped (optional)

* 1 (15 oz) can diced tomatoes

* 1 (15 oz) can tomato sauce

* 4 cups beef or vegetable broth

* 1 teaspoon Italian seasoning

* Salt and pepper to taste

* 1 cup cooked white or brown rice

* Shredded cheese for topping (optional)


**Instructions:**


1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.

2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.

3. Stir in bell peppers and celery; cook for 5-7 minutes until slightly tender.

4. Add diced tomatoes, tomato sauce, broth, Italian seasoning, salt, and pepper. Stir to combine.

5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.

6. Stir in cooked rice just before serving to keep it from getting mushy.

7. Ladle into bowls and top with shredded cheese if desired.

Want a lower-carb version? Swap the rice for cauliflower rice and simmer it directly in the soup!
