Ingredients:
* 4 boneless, skinless chicken thighs or breasts
* 2 cups cooked rice (white or brown)
* 1 ½ cups pineapple chunks (fresh or canned)
* 2 tablespoons soy sauce
* 2 tablespoons honey
* 1 tablespoon olive oil
* 1 tablespoon minced garlic
* 1 teaspoon grated ginger
* ½ teaspoon red pepper flakes (optional for heat)
* Fresh parsley or green onions for garnish
* Salt and pepper to taste
Instructions:
1. In a bowl, whisk together soy sauce, honey, garlic, ginger, and red pepper flakes.
2. Add chicken to the marinade and let sit for at least 15 minutes (or up to 4 hours in the fridge).
3. Heat olive oil in a skillet over medium-high heat.
4. Remove chicken from marinade (reserve marinade) and sear for 4–5 minutes on each side until golden and cooked through.
5. Pour remaining marinade and pineapple chunks into the pan and simmer for 5–7 minutes until sauce thickens slightly.
6. Serve chicken and pineapple over a bed of rice.
