Ingredients:
* 1 box yellow cake mix (plus ingredients listed on the box: eggs, oil, water)
* 1 can (20 oz) crushed pineapple, undrained
* 1 cup granulated sugar
* 1 package (8 oz) cream cheese, softened
* 1/2 cup unsalted butter, softened
* 3 cups powdered sugar
* 1 teaspoon vanilla extract
* 2-3 ripe bananas, sliced
* 1 cup chopped pecans (optional, for topping)
* Whipped cream or Cool Whip (optional)
Instructions:
1. Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking dish.
2. Bake the yellow cake according to package directions. Let it cool slightly.
3. In a saucepan over medium heat, combine the crushed pineapple (with juice) and granulated sugar. Bring to a boil and stir until slightly thickened (about 3-5 minutes).
4. Poke holes in the warm cake using a fork or skewer, then pour the hot pineapple mixture evenly over the cake. Let it soak in and cool completely.
5. In a bowl, beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract; beat until fluffy.
6. Spread cream cheese frosting over the cooled cake.
7. Top with banana slices and sprinkle with chopped pecans.
8. Chill for at least 1 hour before serving. Optional: Add whipped cream on top!
Pro Tip:
Toast your pecans for 5 minutes in a dry skillet to bring out extra nutty flavor before sprinkling on top! π₯π₯
