Golden, crunchy tortillas stuffed with juicy seasoned beef and gooey cheese, topped with salsa, sour cream, and fresh tomatoes!

Ingredients:

* 1 lb ground beef

* 1 small onion, finely chopped

* 2 cloves garlic, minced

* 1 tsp chili powder

* 1/2 tsp cumin

* 1/2 tsp paprika

* Salt and pepper to taste

* 1 cup shredded cheddar cheese

* 1 cup shredded Monterey Jack cheese

* 4 large flour tortillas

* 1/4 cup oil (for frying or brushing for baking)

* Optional toppings: sour cream, salsa, diced tomatoes, chopped cilantro

Instructions:

1. In a skillet over medium heat, cook ground beef and onion until browned. Add garlic and spices, cook for 2 more minutes. Drain excess fat.

2. Stir in both cheeses until melted and combined with beef. Remove from heat.

3. Lay out tortillas, spoon filling into the center of each, and fold tightly like a burrito.

4. To fry: Heat oil in a pan over medium heat. Fry each chimichanga seam-side down until golden and crispy, about 2–3 minutes per side.

   *To bake*: Brush with oil and bake at 425°F (220°C) for 15–20 minutes, flipping halfway.

5. Top with sour cream, salsa, tomatoes, and cilantro. Serve hot!

Pro Tip:

Add a few spoonfuls of refried beans or rice inside each chimichanga for extra flavor and texture!
