A sweet twist on taco night – creamy, crunchy, and bursting with strawberry goodness! 🎉✨
Ingredients:
* 6 small flour tortillas
* 1 tbsp butter (melted)
* 1/2 cup crushed Golden Oreos or vanilla wafers
* 1/4 cup crushed freeze-dried strawberries
* 8 oz cream cheese (softened)
* 1/2 cup powdered sugar
* 1 tsp vanilla extract
* 1 cup heavy whipping cream
* 1 cup diced fresh strawberries
* Strawberry sauce or jam for drizzling
Instructions:
1. Brush tortillas with melted butter, then drape over oven rack bars to form taco shapes. Bake at 375°F (190°C) for 5–7 minutes or until crisp. Let cool.
2. In a food processor, pulse together crushed cookies and freeze-dried strawberries. Set aside in a shallow bowl.
3. While shells are still slightly warm, lightly brush outsides with more butter and roll in the strawberry crunch coating. Let cool completely.
4. Beat cream cheese until smooth. Add powdered sugar and vanilla. Mix well.
5. In a separate bowl, whip heavy cream to stiff peaks, then gently fold into cream cheese mixture.
6. Spoon or pipe the cheesecake filling into cooled taco shells.
7. Top with fresh diced strawberries and a generous drizzle of strawberry sauce.
