Mini no-bake cheesecakes with a juicy strawberry topping and golden crunch—perfect for sweet snacking! 💕


Ingredients:


* 1½ cups graham cracker crumbs

* 4 tbsp melted butter

* 16 oz cream cheese (softened)

* ½ cup powdered sugar

* 1 tsp vanilla extract

* 1 cup heavy whipping cream (cold)

* 1 cup strawberry jam or strawberry sauce

* 1 cup diced fresh strawberries

* ½ cup crushed Golden Oreos or vanilla wafers (optional for extra crunch)


Instructions:


1. In a bowl, mix graham cracker crumbs with melted butter until it feels like wet sand. Set aside ½ cup for topping, and press the rest into the bottom of a lined mini muffin tray or silicone mold.

2. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.

3. In a separate bowl, whip the cold heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.

4. Spoon or pipe the cheesecake filling on top of the crusts. Smooth the tops with a spoon.

5. Add a small spoonful of strawberry jam or sauce on each bite, then top with chopped fresh strawberries.

6. Sprinkle the reserved graham crumbs and crushed cookies on top for a crunchy finish.

7. Chill in the fridge for at least 1 hour before serving. Carefully remove from molds and enjoy!

Freeze them for 30 minutes before serving for an ice cream-like twist that's perfect on a hot day!
